Bento Scrap Omelet Lunch by Candy Girl
Every morning I make my little ones a bento lunch. I often have scraps left over from cutting their food in shapes. I save the scraps to make lunches for myself. Today I had cheddar cheese scraps. I made a mini cheese omelet in a silicone muffin cup in the microwave.
1. Lightly beat an egg with some herbs (I used dill and fresh coarse ground red & black pepper). 2. Pour into a silicone muffin cup, add scraps of cheese, and place in microwave. 3. Cook about a minute and half. Egg will puff up from cup while cooking! But it will deflate :) 4. Pop mini omelet out of cup and into bento box with the rest of the lunch. Snap bento box lid on and refrigerate until I am ready to eat it. Easy peasy, yummy & cheesy.
Lunch is Red grapes, Cheddar cheese scraps, Mini cheese omelet, and (leftover) Asparagus.

Lunchy Dinner by anchett
Free-range eggs omlet with spring onions, pieces of red beets and mushrooms)пачи-крак). Cooked in soybean oil.
On the side - some green salad, bio quark with flax butter, and a heart-cut mozzarella.
I forgot to add some flax and pumpkin seeds on top and a few cherry tomatoes, but there were none left at home..

Today I made a chicken soup and eat it at home in the company of my puzzle (1000 pieces, super dark thing!) and my friend Bonzaio (my bonsai tree) :) The soup was great by the way! :)))

My variation of something between frittata/omelette/tortilla. It consist of veggies - potatoes, carrots (I forgot the red pepper); eggs, white & yellow cheese, basil. I cook it in butter, cause olive oil is not healthy when heated. This is the basic version. To enhance the taste you can put dried tomatoes, olives, special cheese, a few table spoons of sour cream etc. It also can be cut in pieces that fit any lunch box and eaten with hands or small fork. For me it is healthier choice than a sandwich. Cheerz.
